Recipe for Snowballs
If it should happen that you realize there will be an extra person or two at your Christmas celebration and – GASP! – you have no gift for them, here’s something you can make quickly, put ‘some’ into a mug or fancy little dish you rarely ever use and can give up, and wrap in plastic wrap, and then maybe in pretty wrapping paper if it needs it. (The rest will be for you).
Hopefully you won’t have to dash out to buy these few ingredients;
1 8oz package of cream cheese – softened
1 8oz can of crushed pineapple, well drained.
1 cup chopped pecans (other nuts should work too)
3 cups of flaked coconut
Combine the cream cheese and crushed pineapple in your smaller mixer bowl. Fold in the chopped nuts. Cover and refrigerate for at least an hour. Put the coconut into a dish nearby. Take out the chilled mix in small amounts, and roll into 1 inch balls in between your palms. Then tumble/roll each one in the dish of coconut. Set aside on a cookie sheet or right into the container for your gift-giving.
See? No baking or cooking!
By the way, did you know that coconut is good for your brain health, memory, skin problems, and on and on? Pineapple is good to help blood clot, so you don’t bleed so easily or so long. Nuts are full of protein – energy food!
[Oh my! Now if I had another package of cream cheese I’d be tempted to dash into the kitchen and try another batch with cashew nuts!]
